Any lunch ideas?

I hate making lunch. I figure soup or a sandwich, never soup and a sandwich. leftovers is fine for DD and me but DH likes a nicer meal. I'm trying to economize, so it's usually chili, soup or such, but now that the hot weather is here, he would like other foods. Any ideas? We usually have a nice supper- roast, meat, veggies etc.
 
We are big on a big green salad for lunch in the summer with chicken cubes or cheese or boiled eg on it for protien.

Also, chicken salad in a pita (make up a batch of chicken salad at the begining of the week--it will last a few days in the fridge).

Cold cut sandwhiches on deli rolls are easy and filling for guys who think salad is rabbit food.

Do you need items you can pack or does your DH eat at home?
 
Is he really picky about frozen foods? I ask because Smart Ones makes some really good frozen things that I often have for lunch. I especially love the lasagna. It's pretty healthy too. Also, I've never tried these but I know there are some frozen stir fry meals where you just put them in a skillet. Quick & easy for something like lunch.
 
You could make a chicken taco salad by adding taco seasoning to chicken. Add shredded lettuce, cheese, toma and chips.

Add deli meats and cut-up veggies to a multgrain wrap and roll it up for a wrap sandwich.

Try some wings, cut-up fruit and a salad.

If you like the ease of sandwiches, try making them on a different type of bread or roll than you usually make. Add some healthier baked chips and a fruit.
 

How about pasta salad? DH makes a good one with sliced pepperoni & cheese - either shredded or cubed, broccoli & carrots w/spiral noodles & creamy Italian dressing. You could add more veggies & meat/cheese cubes to make it more filling.
 
MY favoritie sanwich:

Toast a bagel.
Spread onion/chive cream cheese on it while its warm.
Add thinly sliced honey roasted turkey breast.
You could add veggies if you want but I like it as is.

Our favorite pasta salad: (i eat this for lunch a lot)

1 box of bow tie pasta
1 small red onion, diced.
1 sweet green pepper, diced
1/4 lb of salami chopped
1 can of black olives
1 small bag of shredded mozarella
1 small bottle of Kens dressing.

Another thing I do is keep a green salad in the fridge. For lunch I chopped up whatever grilled meat we have leftover and put it on top of the salad. Very easy and a nice way to use up leftovers.
 
Wraps--experiment with different fillings. I like to spread honey mustard dressing on the inside, and top with deli turkey, provolone cheese, lettuce, and yellow bell pepper strips. For ham, spread with ranch dressing, top with cheddar or swiss cheese, lettuce, and shredded carrots.

Another good lunch when I am in a rut is quesadillas.

My husband usually takes leftover dinner for lunch, but I have a hard time figuring out what to make for me & the kids!
 
What about making larger roasts at dinner and using that meat for sandwiches ? You could buy some different rolls and get some nice breads to experiment with. The better the bread , the better the sandwich. Wraps can add variety. As other PP's have suggested, using leftover steak , chicken, fish in a next day salad is great. Vary the extra vegies you use in the salads and dressings for variety.
 
I agree with the pasta salad comment, my kids and husband love it!
We add cut up salami or pepperoni, black olives, cucumbers and grape tomatoes, and italian dressing.

Egg salad sandwiches are quick & yummy.

Macaroni salad with canned chicken added, is so good too.

I've been making a whole chicken in the crockpot (88 cents a lb. at my Walmart, so about a $4.20 chicken for my family of 5) then the next day,
I make my DH an open faced chicken sandwich with gravy from the drippings.
He loooooovvvves this!
