Any good Zucchini Ideas?

Our grocery store had Zucchini CHEAP today so I loaded up. Tonite we sliced it long ways and grilled it with a marinade but I still have enough for 2 more meals. Yikes. Any ideas on how else to fix Zucchini so the kids will eat it?
 
Our kids both like zuchinni bread.... and they're both pretty picky eaters.
 
Cut zucchini into slices and steam until just tender. Sprinkle with olive oil, garlic salt, pepper, and [armesan cheese. Put under the broiler until cheese melts. My family loves this.
 
Zucchini Pie...tastes just like pumpkin pie but you use Zucchini in it. I got the recipe off the net!
 

I make really easy stewed Zuccini:
Cut Zuccini into thin discs
Put in pot with can of stewed tomatoes and one sliced onion
I add enough water so zuccini is covered
Cook until tender
 
Zucchini and Round Steak - Mom's Recipe

Brown round steak in a deep skillet
Mix 1 can of cream of mushroom soup with 1 can of water and 1 package of dry spaghetti sauce mix
Add to round steak bring to a boil
Slice zucchini in circles add to skillet
Cook until meat and zucchini are done to your taste.

Pour over rice or noodles

Honestly, I HATE mushrooms, but love this dish.
 
I have a Chocolate Zucchini Bread recipe. It is very good. I got this from a friend and we all enjoy it very much! You are making me hungry :flower:

stuffed zucchini-

cut top 1/4 off lengthwise and hollow out like a boat.
take interior portion (form hollowing and blend with egg, breadcrumbs, onion, parmesean cheese and italaian spices.
boil a pot of water-throw hollowed zucchinis in just for a couple of seconds.
place on greased pan under broiler (for first 5 minutes put on lower level so egg is completly cooked-then move to just under broiler to brown).

my kids also like zucchini muffins (just grind it up), deep fried w/ranch dressing...
 
I think it would be a good idea to get these zucchini off my kitchen counter before they go bad. ;)
 
LOVE zucchini bread - we usually grow it so we end up with a lot and need to figure out what to do with it. I end up throwing it in the food processor to chop it up like shredded cheese and put them into freezer bags - measured out so that when I make bread I remove 1 bag from the freezer and it is already premeasured. This way I can have fresh zucchini bread all winter!!! Freezes great!!!
 
I just got a very good chocolate zucchini cake recipe from my aunt. Its very good and moist. she also freezes her zucchini to use later. if you would like the recipe, let me know. :flower:
 
My boys are a no go w/ zucchini, but w/ the 2nd recipe they didn't even know it was zucchini :rotfl2: !!!

I am not a veggie eater, except for zucchini, this is my favorite!!!! :p
slice zuc. thinly (round slices)
melt a little butter (1 tbsp) I kind of just eye it, in a pan.*Or use marg. or
olive oil*
thinly sice onion*as much as you like
put both in pan until both are soft( 10/15mins.)
turn off heat
add parm. chez. right away, let it melt
yummy side dish!!!! :bounce:

Zucchini Crisp
8c cubed peeled zuc.
3/4c lemon juice
1/2c white sugar*Splenda-just adjust the amount- should be on box.
2tsp ground cinnamom
1tsp ground nutmeg

Topping
1c packed brown sugar
1.5c old fashion oatmeal
1c all purpose flour
2/3c melted butter


Combine top 5 ingred. Mix well. Pour into a greased 13x9x2 pan.
Mix the topping ingred.well.Spread on top of mixture in pan.Bake 375 for 45-50 mins.untill zucchini's soft & top is browned :earboy2:
 
Would someone post a recipe for regular & chocolate zucchini bread??? My grandmother used to make the greatest bread but now the recipe is gone. I've never heard of chocolate but willing to try if it'll hide some veggies. Will try both since the kids get fussy if they "see" things in their bread. :rolleyes:
 
Here is my Chocolate Zucchini Bread recipe:

2 eggs
1 1/2 c sugar
1/2 c oil
2 c shredded zucchini
1/2 c cocoa
1 1/2 c flour
1/2 t baking soda
1/4 t baking powder
1/2 t cinnamon
1 c chocolate chips

I add all the ingredients to all bowl and just mix. I spray a loaf pan with non-stick spray and bake for 1 hour at 350 degrees.

I shred zucchinis and mix with lasagna or pasta sauce. That's about the only way my kids will touch zucchinis.

Here's one for chocolate zucchini cake I got from a neighbor, though I haven't tried it yet.

2 1/2 cups whole wheat flour
2 1/2 tsp baking powder
1/2 cup cocoa
1 tsp salt
1 1/2 tsp baking soda
1 tsp cinnamon
3/4 cup margarine, softened
2 tsp vanilla
2 cups ground zucchini
2 cups honey (she used 1 cup sugar instead)
3 eggs
1/3 cup milk

Stir together dry ingredients. Put margarine, vanilla, zucchini, honey, eggs and milk in a bowl and beat for 3 minutes. Combine bowl mixture and dry ingredients. Bake in a 9 x 12 greased pan @350 for 35-40 min.

Recipe says 'top with glaze', but I don't have that part.

This is a good way to disguise the zucchini. My boys won't touch it, but I bet they would eat chocolate cake!
