Any good cucumber salad recipes?

I'd like to make one for a barbecue tomorrow. I've never made one before and would love a recipe if you happen to have one! :thumbsup2 Thanks!

A bit of minced onion, and some sour cream. Make this fresh, last minute.

Other than that, Cold Soup (or Mexican Soup) with oil and vinager, salt and pepper... fine stips of onion, green-red pepper, etc... You make this ahead and let it cure for awhile.

Maybe a search for 'cucumber salad' or 'cold soup' would bring up some good recipes!
 
My Mom always made something like this:

CUCUMBER SALAD

3 medium cucumbers, thinly sliced
1 medium sweet onion, sliced thin and separated into rings
1 cup white vinegar
1/4 cup vegetable oil
1 cup water
1/4 cup sugar, or more to taste (or diet sweetener)

The cucumbers may be scored or part of the skin can be peeled for better absorption of the juice.
Layer cucumbers with the onion in a large bowl. In a separate bowl, mix remaining ingredients, stirring until sugar has dissolved.

Taste and adjust sugar for sweetness, adding more sugar, if needed. Pour over vegetables and toss lightly.

Cover and chill for 2-4 hours before serving.

She also made a creamy one like this:

CUCUMBER SOUR CREAM SALAD

4 med. cucumbers
1 1/2 c. sour cream
1 sm. clove garlic, minced
2 tbsp. salad oil
2 tsp. sugar
1 tsp. salt
1 tsp. white wine vinegar
1/2 tsp dill weed

Wash and thinly slice cucumber. Place into large bowl. Stir together all remaining ingredients, except dill weed. Pour over cucumber and toss lightly. Sprinkle with dill weed. Cover and chill. Just before serving toss carefully. Makes 8 to 10 servings.
 
However you make it, either with sour cream or vinegar based dressings, you absolutely MUST use fresh dill. :thumbsup2
 

no help here since unfortunately I never wrote it down but my grandmother used to make wonderful cucumber salad. Very simple vinegar based. Really wish I knew the details.
 
Cucumber/dill is a happy marriage.

I (personally) would avoid the sugar/sweetener.

Sometimes (most times) less is more.

Cukes, fresh tomato, some onion (I'd go red), citrus juice (theres your sweetener), vinegar, minimal EVOO, fresh ground pepper, and an herb or two of choice.
Dill works, as does fresh basil, parsley, rosemary.

A HINT of garlic is fine.

A sprinkling of Kosher or Sea salt is mandatory.

Sour cream slightly thinned with white vinegar. A lot of SWEET paprika. Toss in sliced cukes and let marintae at least an hour. Sometimes she adds chopped red onion or cherry tomatoes.

I love this type of recipe except my family usually leaves out the oil.
 
This one comes straight from DHS Sci-Fi Dine In ... ate it last week and had to ask for the recipe:

Cucumbers, diced into small pieces
Honeydew melon, diced into small pieces
olive oil
vinegar
salt
pepper

Mix all ingredients, chill and serve. Delicious and refreshing.
 
this is super easy, I have a Pampered Chef mandolin slicer that works great for this.

peel and thinly slice 2-3 cucumbers
peel and thinly slice a sweet onion, separate into rings

layer veggies into container, mix equal parts water, cider vinegar and sugar. I usually do about 1 1/2 cups of each for the amount of veggies listed. It's so easy to scale the amount up or down as needed since it's just equal parts. I like to use hot water so the sugar dissolves quickly, then stir in the vinegar. Pour over veggies and refrigerate. It's best to make this the day before so the flavors meld.

Oh, yeah, I have done that but also added red pepper flakes and chopped garlic.
