Of course each and every family is different, but AK is my nieces' favorite park. They're 3 and 1, so they're pretty limited on what they can do here, too, but they like it the best. The 3-year-old would be happy to just ride the Safari repeatedly and spend a whole afternoon at the Boneyard.
I always plan everything at Disney before I go, but I also keep things flexible, just in case. I think an 11:30-12:30 FP time would probably work out okay, though you might be rushed a bit. We've only eaten at Tusker House once time, but we waited well over an hour for our table (we had an ADR). I don't think this is the norm, but it can happen. Also, I have been on the safari for upwards of 30 minutes before. If everything goes very smoothly I'd say you could make the 11:30 time, but if not then you might be rushing to make it by 12:30.
