Lost track of the last "dinner" thread. I am already having leftover vegetable beef soup tonight, but I am looking for ideas for tomorrow. So..
 
DD and I are going to a mother-daughter pitch-in and I fixed stuffed peppers for the guys
 
hamburger, a mixtures of fresh veggies cooked and some rice, tomorrow I'll have shrimp scampi, my son doesnt have to work like tonight :D
 

Porkchops, Mashed Potatoes and Corn for DH and the kids. I had an Atkins Subway Wrap! :)
 
tonighht its blts and fries tommorrow who knows depends on how my eye feels today its hurting so i making secret le kid cook and i think she cvan handle blts maybe, i hope, oh ok i'll cook:(
 
DH was nice enough to bring back some real New York pizza from his recent New York trip. I had a slice of that.

Last night I had a great meal. Sunday I had grilled steak, tomatoes, mushrooms and onions. Yesterday I cooked some penne pasta, cut up the steak, onions and mushrooms and pureed the tomatoes. I tossed it all together with a bit of the cooking water from the penne along with fresh basil and parmeseam cheese. Served it with a salad and a loaf of french bread I had "baked" on the grill on Sunday. From now on I will plan to grill too much food so I can do a pasta dish the next day. I can think of some great combinations.

Apricot Chicken.


Oven to 375. Flour and salt chicken breasts. Put 2 Tbsp olive oil and 2 Tbsp margarine in a baking dish followed by your chicken breasts in a single layer. Bake at 375 for 25 minutes. Combine 1/2 cup apricot preserves, 1 Tbsp dijon mustard, and 1/2 cup nonfat yogurt. Spread on chicken and bake for 30 minutes more.



It is delicious and I serve it with Basmati rice and carrots.:wave2:
