Okay gang. Forget the stupid date imprint on the pics. The 14th of Feb. is correct but the year was 2009.

We cook a Pig every year and invite our neighbors over for the feast. It was a beautiful day for Beer, Booze, and PORK!

I will spare you the details of obtaining the Pig but basically we go to a farm and pic the size Pig we want and I will leave it at that. The Pics will describe the rest.


Pig is rubbed down with a Cajun Rub and Garlic

Pig is placed in the cooking cage

Pig is injected with a salt solution and Marinade

Pig is then placed in the La Caja China Box

Box is covered and coals are added and lit

Coals are spread when white and garlic bread is grilled and then Hotdogs

After 3 hours the Pig is done and then turned over, slits are carved in the skin and a sour orange mix is poured on the skin. Pig is then covered and the skin is crisped to make home made pork rinds

Pig is checked after 20 minutes and skin is done

Steve...this is my first time witnessing a pig roast from start to finish....it really doesnt seem all that difficult....fresh home made pork rinds...MmmMmm!!!!
 
it's the middle of winter, you still need that towel? Where's your fan?
 
I'll make you some cracklin' cornbread out of those pork rinds...just tell me what time I need to be there :hyper:
 

I'm not sure I could eat it with the head left on. I love fresh pork rinds, or cracklins. I haven't had any in years!
 
This reminds me of my wedding reception we actually had a professionally catered pig roast - lots of fun. I havent made that connection to the camping board before - I guess it was always meant to be - Whip
 
I heard Renee actually got the pig, not you.
 
That needs to be the next piggy in a siggy. Looks good wish I had some.

I don't think I could ever bring myself to shoot a deer. They are all so cute! I have eaten venison before. It is pretty tasty if prepared right. My DH has owned cows before. I just make it a point to not get attached. There's no way I could eat a pet. ;)
