Anniversary surprise for DH

DH and I will be celebrating our 28th anniversary on embarkataion day of a 7 day Eastern cruise. We are a party of seven including our boys and their GFs. This will be our first sailing on the Fantasy and am still getting up to speed on all the offerings onboard. Though we want this to be a wonderful family week, we're hoping to carve out some alone time. I'm hoping some of you can help me out with the following:

1. I'd like to have something waiting for us in our room. What have you tried and would you do it again?
2. DH wants to eat at Remy but I don't miss dinner with our family so I'm thinking of doing brunch on day 2. Any special things they can do to make our anniversary special?
3. I'm thinking of booking a Couples Villa at Senses. If you've ever done this, was it worth it? I'm a spa junkie and hubby will really enjoy it as well. It's a nice chunk of change and want to make sure the experience is worth it. Do you have any time after the services just to enjoy the villa? How private is it? If I can hear the nextdoor occupants talking I won't be able to relax.
4. Any other suggestions?

We did this on our 25th anniversary, when we went to Remy my kids and their significant others went to Palo. They weren't into the menu at Remy so it worked out fine. Then the 6 of us did a Palo brunch together to celebrate.
We had a bottle of champange waiting in the room when we arrived. We renewed our vows onboard so there was a lot of DCL pixie dust we received because of that.
We didn't really have a lot of alone time though, our grandkids were 1 and 3 so we spent mostly family time together. Just the one dinner alone for us.
