It depends. I have always been able to do them both in one day, but I was traveling with all adults and we were just hitting the highlights. It is possible for us during a slow time of the year.
I think if you have to do two of the parks in one day, these two would be your best choice. I would do Animal Kingdom in the am while it's cooler (because this is the hottest park) and then MGM in the PM. I would also do MGM in the PM because you don't want to miss the fantasmic show that they have at night. Have fun!
Just my opinion, but I would do MGM in the morning to get FP for the major rides and because some of the shows don't have performances after a certain time....some stop as early as 5pm.
After doing your major shows and rides there, I would head to AK as I find it much less crowded in the PM. also, the Jammin' Jungle Parade is really cute. AK closes before MGM, so if you did miss anything at MGM you could head back later that evening.

Animal Kingdom, in particular, is so much more than rides. The ambiance and theming of the walking trails of this park are much better than the attractions.

ITA! Animal Kingdom is at least a full day park if you really want to see things and not just race from one ride to the next. It is a shame how many people just go in, do the safari, ITTBAB, Dinosaur and think they're done. The first time we went to AK (for pre-opening preview and grand opening) we spent about 2-1/2 days there. There is so much to see and experience. Don't miss the Lion King show and Tarzan Rocks. They are both among the best shows Disney has ever done.
