We have a reservation at Walt's for dinner our second night, but haven't made any other reservations. In the event that we want to make reservations for the third night or for a lunch, is it likely that we can get one a day or two ahead of it or are we likely to find no availability?

It depends on how flexible you're willing to be with the times. It's very possible, but maybe not at the desired (or disable) time. If that isn't an issue, you should have no problem getting a reservation somewhere (as in, may change the restaurant also)

It depends on when you're there. I've had times when all restaurants were fully booked a week in advance! This is more the exception, but on busy times it can definitely happen.

We were there in June and it was very warm then too. We got lucky though and left before that huge heat wave the following week. So glad. As someone who lives in CA and EVERYTHING has AC it was hard for us to deal. We found that pretty much nothing had AC. Nothing at the parks or in paris. Then trains didn't have it, no shops or restaurants. I get that Paris "usually" is not that hot but we were dieing. Hope you have a great time. We did enjoy it and thought that it was a very pretty park.
