I know, right? Poor thing. I've never had it, but my dad has. My aunt made a waldorf salad for Thanksgiving and it was bad mayo.....he still gets sick thinking about it and that was like 25 years ago.

Okay, guys, I am dying, but from laughter, not chicken salad!

I stayed up last night googling how long the wait was for food poisoning to set in, also spent time Lysoling the toilet, in preparation for the big event. Must have a clean canvas, you know.

Then, I douldn't go to sleep, listening for any slight gurgling sound that might give an early indication. Also, because I had just gotten a tetanus booster, I couldn't lie on my left side. The last time I checked the clock, it was 4:17 a.m.

But...no sickness ensued! I lived to tell the tale of surviving the chicken salad anxiety!

Thank you so much for cheering me through this ordeal! I could not have made it without your encouragement!

BTW, Newk's is a fairly new restaurant franchise in our area (Tennessee), and has the greatest food! Think it will be a while before I try their chicken salad again, though.

I wouldn't worry about the chicken, it was fully cooked. It's the mayo I'd be scared of. But honestly, since it's been this many hours, you will probably be just fine.

I just read recently (Good Housekeeping, Family Circle, Woman's Day, Woman's World, or First) that the acid in the mayonnaise actually protects it from going bad.

It's the eggs that go bad!!!

What I have always heard is that it isn't the chicken (or egg or other protein) and it isn't the mayo. It is the COMBO of the protein and the mayo that'll make you sick.
