If I am staying LVCL in April would they have me in their system to email with questions?
They may or they may not have you in their system. They may initiate contact, but it's not guaranteed. If you have a reservation with them already, you can call or email them and they'll look up your reservation. Sometimes if you go through a TA they can't contact you first, but if you call them they can help you.
April is soon, too, so I would recommend calling/emailing them so that they can help you with your requests, ADRs or anything else you might need.

I just did a room only and paid for just one night for a deposit. What I found surprising was that room only reservations can be cancelled 5 days before trip.

That's why we always prefer room-only over a package. Plus you don't have to pre-pay it then try to get a refund if for some reason you need to cancel...
This is standard hotel practice, though. Most hotels in the US that we stay in ask for 1st night's deposit and have cancellations with no penalty around one week out. I book a room-only unless a package ends up being significantly better (only happened once and that was with the 4/3).
