Unfortunately you won't be given a cot for the third adult in your party. Did you know Disney's nightly room rate covers up to two adults staying in a room? Each night Disney will add an additional Guest charge to your nightly room rate since you have three adults. At the Value Resorts this is about $10.00 per night; Moderate and Deluxe resorts have higher additional Guest rates per night. (Deluxe additional Guest charge was $50.00 a couple of years ago, fyi.)

You will still have an excellent deal for your total room charge per night when you consider you will be splitting this charge 3 ways. Also, don't forget about all of the benefits you'll receive while staying at a Walt Disney World Resort. I hope you have a fabulous "get away" vacation!!

It looks like the moderate resort Port Orleans Riverside does have some cots for a 3rd adult in the room. While this resort would cost more, you might want to consider it since you seem interested in a cot. This quote is from Disney World's Moms Panel Website and was recently answered by Moms Panelist Darcie:

"I spoke with a very nice Cast Member at Port Orleans Riverside today to find out the answer to this for you. Good news! I was told that you can request a rollaway bed to accommodate your party during your stay at Port Orleans Riverside. There is a fee for the bed though; currently rollways cost $15 per night. Pricing is always subject to change so you will want to verify it at check-in. Enjoy your stay!"

I don't know how you are traveling...but we took an air mattress for our son (who was 14 and adult-sized)...He loved it!!!
You have to do a little manuevering in the room for the night, and during the day, we would stand it up against the wall.
He said it was so comfortable! Both he and our daughter were calling dibs as to who would sleep on it for the night...It cost $40 at Walmart.
Might be a good solution for you...:goodvibes

we do the same with an air matress when we stay at hotels.(dance comps,etcc..) its comfortable and easy to bring.
 
we ended up booking 2 rooms @ music, found an agent that books 5% discount off disneyworld.com. magical express isnt included when we book thru this agent but the agent saves us $75 per person and we were renting a car really cheap anyways.
 
Just go to Target and buy a cheap air mattress and deflate it in the am before housekeeping arrives...the beds are double, you could always take turns sleeping solo.....
