Yikes! This is very last minute, sorry!

We always have snacks on Christmas Eve (to munch on while we play games and listen to Christmas music.)

This year the menu (so far) is:

Clam dip (w/ crackers)
Onion dip (w/ potato chips)
Pizza dip (w/ bagel chips)
Beef/salsa/cheese dip (w/ tortilla chips)
Bangers wrapped in croissants
All the Christmas cookies we can eat ;)

I would love to serve something else, not a dip, and something that is relatively easy to make. My sister already shot down the crockpot meatballs idea (rats!)

Please share your ideas, if you don't mind. Thanks!!!!

Stuffed mushrooms and shrimp with cocktail sauce. I also like to munch on cheese, my husband loves pepperoni.

I was going to suggest ring bologna with cocktail sauce, but then I saw you live in FL. Last I heard you can't get that there.

On of our favorites is Crab Rangoon. It's not hard to make, but does take some time to do them all. DD enjoys helping to "wrap" them up, so maybe that's an option. BTW - I substitute the fake crab. Also, I don't deep fry. I either pour some oil in a frying pan - maybe 1/4" - and fry them that way, or I spray them with oil from the Misto & bake. I forget the time, though. (They're better done in the pan.)

CRAB RANGOON
Source: Gourmet magazine

Filling
1/2 lb crabmeat, drained and chopped
1/2 lb cream cheese, room temperature
1/2 tsp A-1® Steak Sauce
1/4 tsp garlic powder

Wrappers
30 won-ton wrappers
1 egg yolk, well beaten
Oil for deep frying
Chinese mustard and/or red sauce

Combine crabmeat with cream cheese and seasonings in a medium bowl and blend to a paste. Place heaping teaspoonful on each wonton. Moisten edges of wontons with egg yolk. Gather the four corners of the wontons together at the top and pinch the edges together to seal. Heat oil to 375ºF. Add wontons in batches and fry until golden brown; about 3 minutes. Remove with a slotted spoon and drain on paper towels. Serve hot with Chinese mustard and red sauce for dipping. Yields 30.

I forgot to say that we don't bother with stuff for dipping. They're good just "so". :D

Our supermarkets stock a ton of frozen party food - things like mini bitesize pizzas, sausage rolls, cocktail sausages, indian samosa's etc - I like to get a selection and just heat them up in the oven, nice and easy and they always go down a treat.

I would imagine that you have something similiar over there?

Bev

THANK YOU!

I knew I could count on you guys for help! I feel like smacking myself in the face - how could I forget some of these things? Cheese and crackers, d'oh! Shrimp with cocktail sauce! Pepperoni! Crazyme5kids, I haven't had stuffed mushrooms in ages and I love them. MMM!

Thanks for the crab rangoon recipe, Deb! That is something I would love to make. I think I will save it for New Year's Eve! We always have snacks then too. I know Ross would love it and eat them all up!!! :)

Bev - we have a SAMs club just down the road. I was heading over there later to purchase some beer and rum, so I will make sure to check out the frozen food section to look for a box of appetizers. I completely forgot about that.

Thanks again! You guys have been a tremendous help. I think between wrapping last minute gifts, getting the house ready and trying to figure out when to give the dog a bath, my mind just could not see past the mental list I had for our Christmas Eve snacks. THANKS THANKS THANKS!!!

Bouncing off to work on my list! :)
