I have looked through the threads and the facts here and at wdwig, butcannot find what days the sunset safari are held on. Can anyone help me out?

According to AKL IPO staff it's Monday, Wednesday, and Friday and it's called the Wanyama Safari. Meets one and a half hours prior to sunset.

Sunrise Safari Breakfast Adventure is on Tuesdays and Saturdays. Not sure about the Sunset Safari.

Sunrise Safari as of April 1, 2005 is now held on Thursdays and Sundays.
