I have a mix of a protein shake and sugar free pudding mix in the freezer to try after dinner tonight, fingers crossed!
Some things I have learned…
-Sit the container in very hot water for a minute or two before spinning it. The soft/melted sides help with the spin. If you don’t do this you will have hard icey bits all around.
-Don’t fill the container up to the fill line, it makes it very hard to scrape down the sides after first spin
-a half filled container is ideal for one person
-after first spin use a butter knife or spoon to scrape down the sides. They get stuck and sometimes the bottom does too.
-after first spin it can look like powder. After you scrape the sides make a little well in the middle and add a little bit of liquid, then use the re spin button. Try a tablespoon amount first. You can add more but too much turns it into pudding.
-never freeze your containers with the lid on. It causes a hump in the middle forcing the machine to work harder.
-dismantle the blade from the lid to wash. The hole under the blade gets dirty. Also, clean the little spindle thing that turns the blade. It will also have stuff on it.
-if you can’t eat all of what you make and refreeze, it will require another hot water soak and spin to get it back. It may or may not require a little liquid.
-if you use frozen fruit, chop it up really small before you freeze it so you don’t force the machine to work harder
-you don’t need to freeze over night. 7-8 hours is often enough. It needs to be frozen solid but not like a rock.
-sometimes it’s not right after a re spin. You can re spin a second time but sometimes the mix in setting is enough.
The recipe that works well for me is to half fill the container with a protein shake. Add a heaping tablespoon of sugar free instant jello pudding powder. Then some additional flavour with Matteo’s thin coffee syrups. Then wisk the heck out of it until it just barely starts to thicken…maybe one minute. Freeze. Spin on light ice cream. This recipe is about 80-90 calories for the whole thing. Fat and carbs are in the low single digits.
