We have a 11:15am return flight on Southwest.

Can we use Southwest luggage service for that time of flight?

What time would we have to have the luggage at the luggage desk?

How do we get our boarding pass?

It will have all of your comprehensive answers, but I'll give you the abridged version.

RAC [Resort Airline Checkin] is available at all resorts from 5:00 AM - 1:00 PM. Southwest is a participating airline so you can check in at the RAC desk, they'll tag your luggage and print your boarding passes. They operate like curbside checkin at airports. With the 3 hour rule for checking luggage I would be at the desk no later than 8:00 AM for an 11:15 AM departure.

What time would we have to have the luggage at the luggage desk?- No later than 3 hours before your flight. There is usually a long line so I would get in line no later than 7:15 a.m.

How do we get our boarding pass?
You can check in 24 hours before your flight and then ask at your resort check in desk or even guess services at a park can print them for you. Getting your pass ahead of time will save time at the RAC desk in the morning.
 
We always fly Southwest. We get our Boarding Passes hung on the door the morning we leave. We don't do anything to get them, they just print them and deliver them.
 

I always get EBCI when flying home from WDW. Why? I hate worrying about checking in at the 24 hr mark. It's worth the small addtl cost to not worry about it.
Then, I head to RAC first thing in the morning, hand my bags off, get my boarding passes, and go about my day.
You would have to have your bags checked, boarding passes in hand, walking away from the RAC counter no later than 8:15. You must be finished checking your bags no less than 3 hrs before flight departure time.

Most likely when I booked our return ME trip. Though that still wouldn't require me to use RAC or ME. Matter of fact, last 2 trips we didn't use ME. We did use RAC but we used Uber to return to the airport.
I don't pay for ECBI, I do it myself on my phone at 24 hours. They just printed out the boarding passes associated with it. On ever trip we've flown they've left our boarding passes on the door the day of checkout.

They go by your DME reservation, they have your return flight #. I've found it to be hit or miss if they print the boarding pass during the night and slide it under your door or hang it on the door knob. When I was at BWV in December they did.
 
I've used RAC and DME many times...but January was the first time ever that I had the bp's and info sheet left for me the night before. Not sure why they pring out those tags...they aren't the ones they use, officially. I left the provided tags in the envelope, went to RAC to get checked in, they put the regular ones on, and off I went. They told me it was because I had booked r/t with DME. Well...I've always done that.....never had anything left for me before.

I leave at 10:55 am on a flight to Canada. One flight at 11:20am on Southwest. One flight at 11:55am on Southwest.

I put us all leaving at 10:55am so we can all leave together for the Magic Express.

The Southwest people will check in with their phone 24 hours before.

Can they go to RAC desk with their phone to get luggage tags?

Should I leave all the times for 10:55am or the correct flight times?
 
The SWA people can use the phone app to check in at RAC. The RAC folks don't hand out luggage tags. They will take the bag from the SWA people put a tag on it and take the bags to the airport for the SWA people.
The SWA people must get to the RAC desk no later than 3 hours before their flight time. Factor in that there can be a long line at the RAC desk so allow extra time to get those bags handed over to RAC. So I would be at the RAC desk no later than 7:20 a.m.

If you all want to leave together on the same bus then leave the time as 10:55. However, I believe the pick up time for international flights is 4 hours before departure. Which would mean your DME time will be around 7am. So with that in mind you will need to be ready at the DME stop 15 minutes prior. Your SW fliers would need to have their bags checked in at RAC probably 30 minutes ahead of that. If that were me I would be leaving my room at 6am to go to RAC.
