The on-site hotels list an age minimum of 21 to check-in, but I was wondering how strict they were about that, for example if I'm 19 years old and go to check-in would they stop me or ask for ID?
 
Yes, they will need your ID. Any hotel will ask for your ID whenever you check in.
 
I'm sorry, I guess I didn't phrase my question right. What I mean is, how strict are they about the age minimum? Even if they ask for ID, would they care if I am not 21?

You need to be 21 or older to checkin and someone 21 or older needs to be in the room. So you can't have someone 21 or older checkin and hand the keys to you and they leave. My bosses son is in this same problem he is almost 21 and he cannot stay there without someone over the age of 21 being present durring the stay. :thumbsup2
 
I have found this to be true at most hotels, Not just Universal hotels
