Advise me on our upcomig trip

We're heading to Orlando the first week of May. Mostly Disney for the two youngest in our group but planning one day at US/IoA so the Mrs can do the Harry Potter thing. What can I expect in the way of crowds on a Wednesday early May? What are the "can't miss" attractions for 3 adults and 2 little (under 5) kids? Good places to eat OOP? Both parks or just IoA?

Been to WDW before, but never US/IoA so I figured I'd come to the experts for advice.

If you've only got the one day to spend, I would stick with IOA only instead of trying to running around all over trying to see everything. The crowds shouldn't be too bad during the week in early May but WWoHP has been a wild card so far. There's no telling how bad the lines will be for HP. The rest of the park should be calm. I would try to see everything you can and not miss anything except maybe the Sinbad show...it's not very good.
