Luckily Christmas this year falls on such a day that break this isn't as long as previous years. I would make sure their attendance is as close to perfect as possible. Ask the teacher(s) for work ahead of time or have your kids create a journal or project of some sorts based on the trip. We are lucky that our kids are only preschoolers right now, but they had perfect attendance this year and when we go in September I've made a journal for them to fill out (age appropriate with boxes to draw pictures in or to answer a question with one word). If your kids are in higher up grade levels, January isn't a typical "testing" month so that shouldn't be an issue. You have to do what you think is best. Vacations even at WDW can't teach children a lot (social studies in epcot, sciences in future world and AK, physics of trains/planes/monorails, Math skills with purchases, etc.).
