Advice for a 21st birthday trip please :-)

I have booked a trip to Universal for my daughter's 21st birthday. We are going the week of Thanksgiving, travelling out on Sunday and back the following Saturday. I've booked Pacific Royal club level with 5 day 2 Park passes. I didn't add VB to the passes because November could be hot or cold and I know we can pool hop. My daughter turns 21 on the Tuesday of the trip. I'm thinking Margaretville for dinner on her birthday and I need to book a buffet for Thanksgiving dinner at one of the hotels when we get closer to the trip. I'm also considering poncho seats for Blue Man Group. I know they aren't the best seats, but hopefully it will make a great story. Am I missing anything as far as general planning, Thanksgiving week, or 21st birthday experiences? After planning WDW vacations, I'm a bit nervous because this seems so simple to plan.

Also, how is the shopping at CityWalk? I'm considering not pre-purchasing some items such as a new swimsuit for my daughter and just buy it there. Is this a realistic option?
