I have tried searching and reading through the forum and not found my answer, so I do apologize if this has been asked before.

There will be 7 people in our party (2 seperate families) we are both staying on Disney and are doing the dining plan. As our 180 day approaches, we are trying to get ready to make our calls. All (except 1) meals will be together. When we call to make our ADRs can one of us call and make it for the whole party? Do we need both confirmation numbers? We also were thinking that we would come up with 2 plans and both make ADR. Then when we finalize our plans we can cxl the ones we dont want. Is this a good idea?
Does anyone have any ideas for us?

Sure, you can call and make a reservation for any party you want to - doesn't have to match your hotel reservation or anything. Heck, you don't even have to tell them you're staying onsite if you don't want to unless you want to book your entire trip of dining reservations on your 180th day out.

Or you could both make reservations and cancel any that you don't want in the end.

You can make ADR's for your whole party. You don't need the confirmations for both of you. They will ask if you are on the DDP, but that is it. The reservation will be hooked to your name and resort reservation, but that is fine. But like the PP said, you don't even have to tell them you are staying on site.
