My dh has high blood pressure/hypertension. Are there any options as far as letting the TS restaurants we have ADRs at know ahead of time about this? Would they be able to prepare a low-sodium optional menu for him?

The vast majority of TS restaurants wouldn't even bother noting that down, because it is the type of special request that they're ready, willing and able to cater to at a moment's notice. Just ask the server for the opportunity to talk to the chef about your dietary needs, if you feel that is necessary (they're typically more than happy to, in my experience), or just relay them to the chef through the server, if you feel comfortable with that.

If you go over to the disABILITIES Forum and look at Post#3 in the "disABILITIES FAQ" we have a lot of information and links about special diets and how to handle them at WDW. You can just follow the link in my signature to get to the FAQ directly.

I agree with Bicker that this is something they can deal with on the fly as long as he doesn't have one particular entree in mind because they may have premade sauces that they can't adapt. You can always get a plain steak, chicken, or fish in every place that hasn't been marinated or salted. Things like soup, many sauces, and salad dressings probably won't be options. I have multiple food allergies and they were always able to get me something fairly plainly made that was still very good and the things they subbed for some of the salty/fatty potato sides were amazing like grilled asparagus.

My MIL has diabetes, emphasema, and CHF with renal disease. Basically, she has to watch her sugar and her sodium like a hawk. Our upcoming trip with her in December is going to be somewhat of a mine field in dining since we are at Disney's mercy for 8 days and a couple of extra meals.

I wish that we could afford a 2 bedroom unit at OKW or SSR for our stay, so that we could prepare some meals in our room, but at over $500 a night, that's just not possible. We are staying budget this trip with a couple of rooms at ASMo.

Our ADR call in day is this coming Friday, the 13th. I will have it noted on our ADR's that she has sugar and sodium issues. I also will be calling the special services line that is listed in the DISabilities board FAQ to make further arrangements and tweak our meal plans accordingly.

I really want our December trip to go smoothly. Hopefully, it will.

I think all will be fine. WDW is great about working with you. I find though that avoiding buffets and preplated meals makes life easier in general plus being sure that all places are WDW owned--like the Mexican place in Epcot isn't nor is Wolfgang Puck. I find with my allergies they can always get me something I can eat at TS places. I may not get a dessert except fruit but I understand. When I found snack options that work well--they have a special diets shelf in the Main St Bakery I bought a bunch to carry around for later. CS is much more difficult but the resort CS was great because they do have ingredients and a kitchen so they can make something special. At the All Stars they get really busy so going for meals early or late will be helpful in them having time to really help you.
