DW and I are going in September with our 1 year old. I know we don't have to pay for his food, but should I count him in our ADRs (so reservation for 3) or just the 2 of us? TIA!

Everyone must be counted for the ADR regardless of age or whether they eat or not.

You need to count him - this is because he is a body and it has nothing to do with eating

Also, betting you want a place to put child. High chair, whatever. Takes up aisle space, impacts server movements.
