ADR, How to plan when EMH aren't out?

We really want to do Liberty Tree and Le Cellier for lunch times, due to cost. And then Rainforest after that. My question is, since we are going at Thanksgiving time, It is a Must we have ADR, but we also want to avoid the EMH as much as possible. I know the times will be gone quickly on these 2 favorites, we will only be there 4 days. So should I book LTT and LeCellier for 2 days each, and then cancel one when the dates of the EMH come out?Then try to fill in with Rainforest after I know for sure? I might not get Rainforest since I would have to wait on that one.
What would you do?

I wish I could advise you...I'm going Thanksgiving week, too. It's a challenge trying to figure out ADR's without having park hours. I've tried to study the EMHs for the months listed now to find some consistencies. I suppose you could book LTT for 2 days and then cancel 1. I've decided I want to try and eat Thanksgiving Dinner there myself. Park hours for November should be posted less than 2 weeks after my 90 day ADR mark. I'm going to make my ADRs for our "must do" places and maybe adjust when park hours come out. Good luck with your ADRs!
