Why so serious?

We already have 3 ADRs (made at our 180 day mark) for our trip to WDW starting Nov 30th. But we were trying for a couple last minute reservations, just to see (for example, a CM told us she just made 2 CRT ressies before we called, so one never knows).
A few CMs told us similar things--keep trying, especially right after Thanksgiving, as they are seeing a large amount of multiple bookings (some will cancel/switch, some won't). They seem to feel there will be openings after the holiday...still tight, but more possible.
That makes sense, but I would assume ADRs for the big named restaurants and character meals usually this challenging, (especially a week before leaving). Add to that a holiday stretch and
The free dining that is being offered, that is for select weeks, correct? We are going Nov 30-Dec 5 (I don't believe the promo is running that week?) Or is it
