We have an 8:05 ADR at Sci-Fi, but the park closes at 8 (November 30th). Is that right?

Yes it should be fine. Even though the park closes (which means no one else is let in, attractions/rides shut down), many ppl shop and eat at that time.
Also if you are relying on WDW transportation, that isn't an issue either. The buses run at least an hour after closing, more if ppl still need a ride.
