Adding a day to tickets

We purchased 7 day non-park hopper tickets from UT before the prices went up. However, we are thinking about adding a day to our tickets once we get there, since we ended up moving our flight to early afternoon on arrival day. If we do, we would be going to Epcot and just spending some time in WS, so we really don't have to worry about getting FP+ for that day. However, I am a little confused how much it would be to add an additional day. Would it just be the difference between a 7 and 8 day ticket? Or would we have to pay the cost of the ticket increase as well? I've heard to use the ticket once before adding a day, but I am a little worried about using it our arrival day, then if the price they tell me is too high (factoring in the price increase), and we decide not to add the day, we would end up missing out on one of the other days we planned.

Use the ticket first to bridge the price then upgrade. It will be $10.

Since you didn't buy the tickets directly from Disney, they can be price bridged. You do not have to use the ticket first to do this, but you can if you want. Just make sure to upgrade before the end of your 7th day. Price should be $10.65 with tax. If you're quoted anything else, go to a different CM.

I added a day to my DH's and DD's 7-day PH tickets (purchased from Parksavers) two weeks ago. I went to Guest Relations in EPCOT on our 5th day and it was a super quick and easy process, exactly as you described above.

I have a similar question but in regards to adding the water park and more. We want to do Blizzard beach on the day we get there. Where should I go or who should I talk to about adding the water park?

Go to any ticket booth or Guest Relations. They are found outside the Theme Parks, Water Parks, at TTC and two locations at DS/DTD.

Further...

Do your current tickets already have the HOPPER option on them?
If so,
you want to upgrade your tickets to add the Water Parks Fun and More option.
That upgrade will only cost $26 per ticket, and you will have as many WPF&M options as you have "days" on your current tickets.

If no HOPPER option on your current tickets, and you ONLY want to visit a Water Park on one day of your trip,
you might want to just BUY a ONE-DAY Water Park ticket and not upgrade your current tickets at all. That would be less expensive.
