You could but unless the child is also on your hotel reservation, they won't be able to take advantage of any resort guest benefits like ETE or EEH.

To do it, with the parents' permission, just create a profile in your MDE with the child's info and link the ticket to it.

You can book a restaurant reservation without having to list everyone who will be dining.

For G+, it won't matter that the child is not on your reservation but for ILL$, you will not be able to book at 7 AM for the child. You would have to wait until official park opening to buy ILL$ that include them.

Apologies for the many questions, but just to clarify I would be able to book genie plus rides all together?
How hard is to get ill$ after 7am?

Not sure if my situation is similar to yours but I had to call Disney in order to get my granddaughter set up so that anyone in our party could book LL for her. When I first linked her ticket, only I could manage her account. I wanted anyone to be able to book and make changes for everyone else.
As for ILL$ after 7:00am, that will vary greatly depending on the season, day of the week, particular ride, etc. We saw availability open up throughout the day in July...if what you want is gone in the morning, just keep checking. This is where it pays to have everyone able to book things for everyone else.
