Add on Dining?

Can you add on the dining plan once you check in? Say I book a room only and buy tickets once I get there? The reason I ask is my DH's vacation can vary by a day or two (he is a pilot) I would hate to get a package and then be two days behind and loose money. This is why we never buy a package plan, but I would love to try the dining.

My understanding is that you have to add it on before you arrive and it's part of the Disney My Way package. Of course, that's assuming you're not DVC members since they can add it on without purchasing the package (albiet before they arrive).
