It's the beer company. Anheiser-Busch (sp?) - Budweiser, and In Bev. I don't know what their American beers are, but they own Labatt in Canada, so Labatt Blue, Lite. Kokanee, O'Keefes... I know they distribute Stella too.
 
What does this mean?

There is no special beer in the tasting. You'll drink the same stuff you can get anywhere. As averysmom said, all the beer you'll get is basically Anheuser-Busch products. Nothing unusual, surprising or exciting. If you're a fan of craft beer or like trying new stuff chances are you'll be sorely disappointed.

Yes, my husband loves craft beer and was disappointed with the beer tasting.
 

When we did the beer tasting (admittedly a very long time ago and followed immediately by a tequila tasting so my memories are slightly fuzzy) they had us make a Black and Tan which is Guinness and Bass. No craft beers that I can recall (as I said, recollections are tequila-fuzzy) but not all Anhauser Busch products. One Sam Adams I think.

Tastings, of any kind not just beer, change frequently based on the products that they have aboard, who is conducting it and new ideas that they have. I note that the recent tequila tastings are margarita and tequila tastings when it was strictly tequila when we did it (both times), that chocolate and alcohol tasting has been added, sometimes the rum tasting is rum and mojito tasting and sometimes just mojito.

So, yes, the beer tasting is probably fairly conventional, but you really just never know in advance and just because you've done a tasting of any kind before, it can be different if you do it a second time. That's what I love about them - you can do them over again and have a completely different experience.
 
If for some reason you don't signup the first night, check with guest services after. For sailings with few at-sea days, the sessions fill up quickly, on a TA cruise, you may be able to join at the last minute. One note, you asked about setting up a class, Disney will provide this service if setup in advance and the minimum number of folks is usually 20 - 25. As another poster mentioned, if you are part of the meetup group, see if you can join there.

We signed up for the tasting classes in Studio Sea on the Wonder last April. I'm hoping it's in the same place when we go to Alaska in Aug.

If there's anything that will break you of shyness, it's the meetup groups. They'll drag you out of your shell! :D
