Activities at Disney Springs sell out quickly?

I’m looking at the Aerophile balloon ride and Amphicar tours outside Boathouse and see neither can be booked in advance. Do these sell out quickly? I’m planning a weekend surprise trip for my husband to Orlando for his birthday and thought one of these would be a nice thing to do. But our plan for that day is to sleep in so probably wouldn’t get to Disney Springs until around noon. Are these something you need to get there as soon as the parking lot opens to sign up? I booked us Medieval Times that night so we can’t stay late.

Are they worth getting up early to get if they do sell out quickly? And which one would you pick to do?
