I don't believe they use any protective mattress covering but that doesn't mean you can't bring your own.

You can pick them up at any store like Target, etc.

You can get the kind that go all away around the mattress or just something to lay over the top of the mattress.

They are usually reasonably priced.

You can get the smaller waterprooof crib pads and use several but they tend to move around when the child moves and might not provide the protection you need.

You can just throw away the plastic sheet when you are done.

I took one of these and I think it is great other people do. It keeps the mattresses in good condition. I always thought "what if a wet bed were to dry before the housekeeper cleaned?" I'm sure it would maybe start to smell for the next guest or get moldy or something. Even if a mattress looks dry the inside may still be damp. It just seems like it would start to be bad after a while.

Housekeeping has rubber sheets/mattress protectors that you can request. Just call when you check in and ask them to bring a rubber sheet and an extra set of regular sheets.
 
My niece, who is also too old for pull-ups, had a potty accident last month at the Swan. They brought a new mattress for her. It sounds like this isn't that uncommon.
