Would it be smarter to book our package with 8 day tickets or just with 1 day and then upgrade when we get there? Is there any difference in price?

If they are just base tickets, then there is no advantage to getting them in advance. Disney offers no discount for the advance purchase of base tickets. But, if you're adding hopping, waterpark fun & more or both, there are some small discounts associated with making the purchase in advance.

For instance, the gate price of an adult 8-day hopper is $261.99. The advance-purchase price is $253.47. You'll save about $8.50 per ticket by buying them in advance rather than buying a 1-day pass and upgrading it later.
 
I've never booked a package, so I don't know the advantages or disadvantages of booking tickets as part of that, but I can tell you that I got our 7-day park hopper tickets for $23 less than gate price by buying in advance (from Undercover Tourist using a link in the Mousesavers newsletter). Since I was buying 7 tickets, that was a big total savings.
 

We have old park hop tickets and purchased our pkg. with one day base. A CM I spoke with said if you upgrade all to the same amount, it is cheaper to upgrade the base ticket before you pay off the pkg. There is a slight discount to doing this. Our delemia is that I have old ph passes and not sure if we all have equal days left.
