We will be going to Disneyland with small children and renting a vacation house. We may need nap breaks in the afternoon. Does the parking structure and/or lots let you come and go for the 15 a day or do you have to pay again on the same day?

Yes, you can come and go. Just keep the receipt (card that you put on your dashboard) and you'll be able to have in-out privelages.

We tend to get better parking spots when we return...so make sure you look!

When we had Premium AP's we would regularly stay a little farther away and take a break during the day. We drove and we never had any problems getting in and out of the garage. As Nanseev said just hold onto your parking pass receipt and you will be fine, it states on the pass that you have in and out priveleges.
