we have friends who have AP, and I'm wondering if they could make the room reservation for us and just put our names as the registered guests so we could get the EP in our names? or would their name have to be listed as well? they would be joining us in the parks so no problem producing the pass at hotel lobby, but they will not be staying on site hotel.

They would have to reserve the room and be the ones checking in for the room.

If your room isn't already "full", pay the extra $10 or $20 and add one of them to the res.

Yes, you only need one. Now, I'm not sure whether that person has to be the primary one on the res or not, though I don't believe so as I have used my wife's in the past when I was going to renew mine at guest services later that day. Also, all that you have to do is have them present it at some point up to and including when you check out, they don't have to be there at check-in, but it's always a good idea to double check that you are getting the AP rate at check-in. I'm not sure if it is still the case, but when they used to give you a % discount (years ago) rather than structured discounted rates that vary, it was required that you informed them of your passholder status upon check-in.
