? about allergy info on reservations in MDE

My son and I have Celiac Disease and our family uses a third party Disney planner to schedule our Disney trips. This is our first time going with a My Disney Experience account. I asked our planner to add a note about our gluten free requirements for two of the four of us (because I see everyone on the boards saying it should be noted on the reservation) and when I go into our ADRs it says this:

Your special dietary and/or accessibility request has been noted. To protect your privacy, the details of your request are not listed in the confirmation. You are welcome to see the manager or chef upon your arrival to discuss specific dietary needs.

Please note all Guests have the opportunity to consult with a chef or Special Diets Trained Cast Member if desired. We use reasonable efforts in our sourcing, preparation and handling procedures to avoid the introduction of the named allergens into these menu choices. While we take steps to prevent cross-contact, we do not have separate allergy-friendly kitchens and are unable to guarantee that a menu item is completely free of allergens. Allergy-friendly offerings are reliant on supplier ingredient labels. We cannot guarantee the accuracy of the contents of each food item. Allergen advisory statements (e.g., "may contain") are not regulated and therefore not taken into consideration when developing allergy-friendly meals. It is ultimately our Guests' discretion to make an informed choice based upon their individual dietary needs." Is this correct? I'm wanting to make sure that this isn't in everyone's ADRs and really means that our gluten free note is in the reservation somewhere. I'd just feel better seeing it myself. ;) Thanks!
 
I would say that, regardless of the note in the reservation, I would say something to the host/hostess and/or waiter/waitress. I traveled with friends who have allergies/other issues with food (peanut allergy, egg allergy, dairy allergy, lactose intolerance) and we just made sure to say something at each restaurant.
 
Yes, that's what the allergy details section of our ADR looks like (and I put the notes in myself). When they check you in, they'll have a slip of paper with ALLERGY stamped on it. Your server should ask if you're comfortable ordering from the allergy menus or if you'd prefer to speak with the chef. We've never gotten a chance to mention it first actually, they've always immediately confirmed that one of us has an allergy and we gave more info from there.
 
It looks like the standard note for an allergy when you make a special dietary request for ADRs.
As mentioned, if your server doesn't mention it when you are seated, remind them. They usually ask "who has the allergy" or something like that and give you the special menu.
 
Thank you so much everyone! I have no problem mentioning it/answering questions about it but saw several posters say you should note it when making the ADRs.
 
My DS is now 30 --partly due to Disney keeping him alive! Anaphylactic allergies to milk, egg, tree nut and peanut.
I have actually been in the kitchens of some of the restaurants to verify ingredient labels, since whey and sodium caseinate are in so many items.

Over our many trips dealing with food allergies, our experience was the disney-owned restaurants are fabulous and attentive.
Go during less crowded hours for more personalized attention.
Otherwise you'll be eating the same packaged alternative item.
The WS restaurants are not owned by Disney. Unless you are very sure of your safe items, they can be a risk. Specifically, for us, France, Morocco, China. Rose and Crown and Teppan Edo have procedures.

Our experience was that Crystal Palace and Boma were the safest buffets with an attentive chef.
