About a cup of Mirepoix (Onion, Carrot, Celery): Help me use it up???

I woke up not feeling too well today, so decided a nice bowl of chicken noodle soup was the answer. Forget about the 90 degrees outside :lmao: I wanted soup. Being lazy and not feeling well, I bought 2 containers of Trader Joe's Mirepoix (cut up onions, carrots and celery). I used about a container and a half, but have a good up left over. I really don't want to waste it. Any ideas on how to use it? :confused3 I am leaving on a business trip early next week, so preferably something that freezes well.
 
Just freeze it in a plastic freezer bag for later . : ) Cajun girl here, use that blend all the time and always have it on hand in freezer. YOu can throw it in chili or soup or even spaghetti later.
 
That was my first thought too. Just freeze it. I make it all summer long with fresh veggies while they are cheap and keep it in the freezer to use in my soups and stews all winter.
 
That may work. Thanks! I slightly cooked it today, so that it isn't raw anymore. I was thinking perhaps a lentil and/or bean recipe might work... But perhaps I'll just freeze it as is and use it in a few weeks.

I have enough chicken soup to feed a small world nation: 6 single servings for the freezer and enough for dinner for the next 3 nights before I leave town.

If anyone has any other ideas for this Mirepoix before I freeze it, please chime in!

I saute it and toss it with orzo, lemon juice and parmesan cheese (and spinach if I have any). It's one of my favorite lunches!
 
I'm always freezing mine because with only 2 of us, things spoil before I can use them up sometimes. And sometimes, there is just 1 of us here for long periods of time.

Cook it down and add a couple of cups of cooked rice and a tbsp of butter. Saute for a few minutes and you have a tasty side dish.
