My vote is Illuminations. I think that is more enjoyable for the guests than Cinderella's Coach. Just my opinion....

At first I was thinking you had a good idea with getting the coach in place of the dessert party, but after reading Nicolle's post--she has a great point...Illuminations would be awesome memories for the guests...and as far as your fdh thinking it is overboard...it could be optional? Then people who don't want to don't have to...
 
The dessert party will be mainly for your guests' enjoyment. You will be physically and mentally exhausted. I would go for the coach. This is your wedding. The guests could still meet together as a group to see Illuminations. There are terrific snacks all around the water that they could purchase. Could an Illuminations party be on the previous night - after the rehearsal?
