Agreed with Golfgal--if you are using meeting space, the hotel may allow you to bring in offsite caterers, but would be very unlikely to allow you to serve any food from a non-commercial kitchen. It would be a liability issue.
 
One problem, the hotel most likely won't allow you to bring in outside food.

We are doing Mexican...
its our fave food...we eat it at least 2x a week and it's not too expensive. We just figure if someone starts goin crazy ordering liquor (over budget) then we'll kindly, jokingly, cut them off and say "Hey..we wanna drink on OUR honeymoon too yanno!"..lol
ANd, if they don't like Mexican....dont come :)
 
I love these etiquette questions on the board, where all the "experts" make their decrees. Facing this question myself as the mother-of-the-groom, I went to a real expert Emily Post and here was her answer:

Out-of-towners can be invited if your budget and the circumstances allow, but it's by no means a must. Traditionally the rehearsal dinner consists of the bride and groom, all attendants and their spouses or partners, the couple's immediate families and the clergyperson and his or her spouse.

Thank you for looking that up--I really didn't want to go hunt down the book at 2:30am. That's exactly who we had at my DS & DDIL's rehearsal dinner, and I'm pretty sure I relied on Emily Post for the info. :thumbsup2
