I hope you had a great weekend. I was at a passion party for a bridal party and I never been to one but it was not that bad. Some of the lotions smelled so good. I stayed away from the toys :rotfl2: . But I hope your week is great. smiles

Hmm, not really a great breakfast. I woke up sore, cranky, and innundated with work troubles and I tried to eat my way out of it. Not the best plan!

--1 brownie

OK, last time I checked brownies do not have the power to make annoying co-workers go away, right?

3:00pm

--1 LC peanut chicken
--1/2 cup peas
--1 1/2 cup popcorn
--1 brownie

7:30pm

--3 cheesesticks
--3/4 cheeseburgers
--1/2 order fries

DH got a tip on this restaurant from some of the police officers he works with at the county. The food was great, but it was a real hole in the wall, the service was amateur, and cooking was super duper slow. In all, I won't be rushing back.

9:45pm

--1/3 brownie

I cut up the rest of my brownies to send to work with DH. I like having that option--it's nice I can try recipies and then send the rest with him when I've had enough.

We bought some automatic cat feeders a few weeks ago, and we can't get them to work right. I think we're going to have to send them back. How annoying!

You bet you can make them yourself. They're super easy!

You just get a pack of pre-made wonton skins at the grocery store (I found mine in the produce section, of all places...). Preheat the oven to 375. Spray a regular or mini muffin tin with cooking spray and add the wonton skins--1 wonton skin for a mini cup or 2 for a regular cup. Once all of the cups are filled, give them another light spray and pop them in the oven. Start checking them at about 6 minutes--they should be golden brown and slightly crispy.

While they're in the oven, begin preparing the filling. There are millions and billions of possibilities! For this batch, I used the following:

--1 5oz can chicken breast chunks, drained
--1/2 can diced water chestnuts, drained
--2 T light garden cream cheese
--3 T reduced-fat mayo (I used Just 2 Good)
--1/2 cup green peas
--1/3 cup shredded cheddar cheese
--3 dashes soy sauce

You could also make barbecue cups with chicken, black beans, corn, and barbecue sauce, or Asian-type cups with chicken, teriyaki sauce, green onions, and cabbage or bean sprouts. Once the cups are done, take them out of the oven, fill them, and pop them back in for about another 10 minutes or until the filling is heated through. Let them stand for a little while so they can firm up.

Another variation for this is to bake the cups and extra minute or two until they are completely crispy, then pull them out of the oven, cool them, and fill them with any kind of chopped salad you enjoy. They're great for parties!!!

I have to say - your journal is so wonderful. I actually ran a search looking for low carb when I first discovered the WISH board and it came up and that's how I got addicted to reading it. You have such a wonderful sense of humor and honesty and I have really enjoyed it - you inspired me with your journal and the wonderful feedback from the sweethearts on this board to do my own.

I especially love the stories about your cats (we have 3) and references to restaurants, etc. My DH is from Chicago so many are familiar. Your reference to Portillo's had me drooling...I love that place.

Although...isn't it illegal in Chicagoland to put ketchup on a hotdog??? :rotfl:

Anyway, since I know you so well from reading your thoughts, I just had to introduce myself. Keep up the good work - you are inspiring!!

8:00 - 10:00am

--1/3 chocolate bar

I've been munching on squares of a Cadbury chocolate bar all morning. The brownies are gone, mercifully, and strangely, the chocolate bar seems to be working. It's tasty, but the portion I've had was less than 100 calories. I know, not an ideal breakfast or anything, but I think I may have actually found something that satisfies my sweet craving without causing me to go off the deep end.

--1 light string cheese
--1 fresh apricot

OK, after this morning's stellar performance, I do need to regroup a bit. I'm going to eat this string cheese and get myself to Curves. After I get back we'll think about a decent lunch!

1:45pm

--1 salad w/cherry tomatoes and broccoli shreds
--2 T light ranch dressing
--1 LC garlic chicken
--20 or so Ranier cherries

I had kind of an odd experience at Curves--I made it through about 3/4 of one circuit, and I was feeling great, then all of the sudden I was so tired I wanted to just lay down and sleep. I felt like someone put my feet in lead. I got off after 1 circuit and I'm glad I did because I began wheezing shortly after. My athsma almost never gives me a problem, but I've been having a lot of sinus congestion, so I wonder if that had something to do with it. I feel a little bad having cut it short, but I at least got my workout buzz. Maybe I'll try to talk DH into a walk/swim tonight if the weather stays clear.

6:00pm

--2 eggs, scrambled
--2 1/2 pieces Canadian bacon
--3/4 cup pancake batter (not sure how else to record this. I made the pancakes, of course)
--1/2 cup blueberries
--2 T sugar free syrup
--1 cup milk

We tried the Krusteaz low carb pancake mix. They were pretty good--very eggy in texture, which makes sense. I think they'd make good waffles. Next time I would add a teaspoon of vanilla to the mix. They were a little flavorless, or would have been without the blueberries.

6:45pm

--1 piece milk chocolate.

Just enough to satisfy the craving!!!

8:30pm

--2 whole wheat English muffins
--2 eggs
--4 pieces Canadian bacon
--2 pieces 2% American cheese
--2T jam
--handful of blueberries

OK, dinner did not stick with me at all. I was still hungry when it was done and I tried to ignore it for almost three hours before giving in. The sandwiches were really good. I could have done without the jam, but by then I was so hungry I wasn't really thinking straight. It looks like a lot of food, but I keep telling myself that this whole mess of food had less calories than one of the McD's double cheeseburgers I thought about getting!

hope your work out at Curves is GREAT...chocolate used to be my weakness...honestly though i've had very little...since i started this in may...hopefully you can conquer the craving some day..until then eating chocolate reasonably is a good thing...

Sorry about your asthma. I know how that goes. One minute you're fine and then you just can't breathe. Yuck!
 
Just finally caught up on how you've been since I've been gone. I sure did think about you a bunch while I was in Chicago on Saturday. I even managed to avoid a good 'dog' or real 'pizza' - not much else, tho!

Sounds like you are regrouping very well. One day at a time.

Chocolate is my weakness, too. Any variety, any temperature, any form.

Asthma can really knock you when exercising. Just take it easy. You CAN do this....you ARE doing this!!

--1 light 'n fit yogurt cup
--1/2 cup Organic Morning cereal
--1/2 handful blueberries
--1 largeish plum

This cereal resembles rocks and twigs (in reality it's puffed whole grains and something that really does look like mini twigs) but it's pretty good with the yogurt and berries. Lots of fiber too!

Something about this morning feels a little "off". I'm not sure what, and nothing bad has happened or anything, but I woke up this morning feeling like someone moved everything in my universe 1/4" to the left.

12:45pm

--1 green salad with broccoli shreds and cherry tomatoes
--2T light ranch dressing
--1 light string cheese
--3 carrots
--2 T hummus
--about 15 Ranier cherries
--1 spicy black bean veggie patty

The black bean patty is really, really yummy!! I could have gobbled it all up in 30 seconds, so I had to pace myself. Like last night, this is a ton of food, and hardly any calories! Low density food are awesome!

I made it through a full workout at Curves today. It was also weigh and measure day. What I don't get is that weighed myself at home, first thing in the morning, with only my skivvies :earseek: and it said 323. I got weighed at Curves at 11:30, fully clothed, after having eaten breakfast and it said 320.5! I know people always say this, but I think there might be something wrong with our scale. Maybe it got damaged while we left to bake in garage for weeks and used it to weigh out bags of sod. I woudn't be surprised. I have to use some of my barbells to test it later on.

This is fixing up to be a nice afternoon. I put my reports for my work project into the system to process so now I all I have to do is monitor them and make sure they don't fail. Otherwise I'm free!!! I have some MASH reruns TiVoed and I may catch up on some reading. DH and I are going to go out tonight--he's leaving to go back to Ohio tomorrow so this is our last night. We'll have to go have some fun!

3:45pm

--2/3 bag light popcorn
--2 chocolate squares

I was starving this afternoon! Hopefully this lasts until dinner!

6:30pm

--2 pieces italian bread (1/4 of a 6" round loaf)
--1 green salad with 2t. ranch, max
--1/2 piece lasagna, sauce on top instead of cheese
--1/2 breaded chicken breast w/mozzarella
--a few bites mostaccoli with meat sauce & cheese

7:00pm

--1 McD's cone (minus a few good sized bites for DH)

Yummy dinner! DH was a bit reluctant to help (only taking one basket of bread, leaving the cheese off of the lasagna) but he came around and it was a nice meal. I may need a snack later on though--we'll see.

10:15

--almost 1/2 thin crust pizza with sausage and bacon
--8 squares chocolate :rolleyes:

I got super hungry after dinner--it's always kind of a problem when I clean up my eating. It takes a while to find the balance between enough food and too much food. I got way too hungry and made a bad decision.

I think you had a great day yesterday. You were right in stopping the exercise when you did. Personally, I think your food is looking pretty good. Much better than the snack attacks of a few weeks ago. Way to go! As far as the amount of food, sometimes, I have to remind myself the same thing. Whole, quality foods adds up to a larger quantity, but less calories than foods that aren't good for you. It's amazing.

Hey, since you were early to my journal this morning, go check out the ONEDERLAND party on the WISH board. :teeth:

Better get going. Tell that someone to move everything back 1/4" to the right. We wouldn't want you to go around the world to the left all day now. :rotfl2:

I am of the opinion that there is a giant kitty somewhere that knocks my universe around like a piece of kibble because I wake up 1/4" to the left one day and a 1/4" to the right the next.

Food looks good! Hope you're feeling better!

I wouldn't worry too much about last night's slip, the rest of your day looked great! :banana: It takes a little time to get back in the grove, but I know you will do it because you have done it before.
