A Little Help With Lunch Options, Please (A little long)

Okay, this might be kind of long.

For the past week I have been at home, so I have been able to decide what to have for lunch.

Well, today I went back to interning at the hospital. I am there all day, so that includes lunch. Unfortunately, our hospital cafeteria is somewhat lacking. It's called 5 Star, but it definitely ain't!

So I have been eating salads and they are getting real old, real quick. They count Weight Watchers Points on every dish they serve, but their low carb options are somewhat lacking.

Today I had a cup of soup and a scoop of tuna. Gourmet!

Well, I was wondering what people bring for lunch. There is only 2 people in my department so there is no refrigerator. I was wondering if anybody had any suggestions as to what I could bring for lunch that would be good for the Atkins diet?

We have a solf-sided cooler that DH packs for me with meals and snacks for work. I work a 4-10hr week and this cooler holds lunch, dinner and 2 snacks for me - all Atkins friendly - with a reusable ice pack.

We usually fix extras from our meals over the weekend: grilled skirt steak, duck, turkey breast, pork roast. So I take a microwavable container of meat with a container of salad greens. Other favorites: smoked salmon & cream cheese rollups, chicken salad w/avacado, salami & cheese, low-carb wrap "sandwich". I've also tried the Atkins shakes recently - they are a good snack but not really a meal replacement.

Like Laurie suggested get a soft cooler that you can put an ice pack in then you pretty much have no limits. Something easy that I make a lot for lunch is Tuna Salad and if you have to have it on something crunchy (like I do ) subsitute celery for crackers. It is actually really yummy.

I will sometimes by a rotisserie chicken from the grocery store. That will usually last me a couple of days...I pull off the meat and make an instand chicken salad.
Sometimes I will make burgers from the night before and then just reheat them for lunch.
Also, chicken fajita's is another idea, just eat it out of the bowl instead of on a tortilla.
Usually its just leftovers from the night before that I will bring for lunch.
Hopefully your dept. has a fridge you can put things in??
 
I take cottage cheese. I'm not on nearly as strict a carb program as atkins, so I have juice packed fruit with it. I also take the packets of tuna, and a hardboiled egg, put a squeeze of mayo in it (they make those single use packets), and voila, instant tuna salad.

Sliced cheese, beef jerky, etc. are also options.

At Sam's Club I found tuna and chicken salad kits that had single size cans of meat, you can then mix the mayo in and toss the crackers. Celery and string cheese would both keep well in a cooler. Maybe vienna sausages? They don't need refrigeration but I'm not sure about carb content... Hope that helps, although I know it isn't much. I'm blessed to have a full size fridge/freezer and a microwave!
 
Thanks so much for your suggestions, everyone. I had a salad too (yech). I am going to take up some suggestions and get a cooler. Lunch and dinner was so much easier over the summer, when I worked at a restaurant. Many options there!:D
