Does anyone have one......with artichoke hearts....YUM
I always make this. Good Seasons Italian Dressing. Pasta: any shape, but something that will hold the dressing like shells or rotini. Artichoke hearts, roasted peppers, good parmesan cheese cut up not the sprinkle kind. Something green in color like broccoli or asparagus, and really anything els you want to add.

I'll try this again. I'm having trouble with my browser locking up today. :(

1 lb tri-color rotini
1 small jar marinated artichoke hearts
1 jar 3-bean salad
1 can chickpeas
16 oz bottle Newman's Own dressing - either Original (oil & vinegar) or Balsamic Viniagrette
optional:
broccoli, cut small
grape tomatoes
pepperoni, diced
mozzarella, shredded

Pour off the liquids for the artichokes & bean salad & add to cooked pasta. (I usually cut the artichokes even smaller.) Drain & rinse the chickpeas & toss with pasta. Add any, all or none of the optional ingredients in amounts desired. Toss lightly. Pour the dressing over the whole thing & toss again. Refrigerate to chill & toss before serving.

This is my favourite...
Rotini pasta, chopped artichoke hearts, roma or cherry tomatoes, cucumber, bell peppers, feta cheese and sweet onions. For a dressing, I do one of three things...
1. bottled greek dressing
2. Mix 1/2 cup prepared (jarred) pesto with 1/4 cup red wine vinegar
3. Take one large bunch basil, 1/2 bunch parsley, 2 ounces feta cheese, 3 cloves roasted garlic, 2 tablespoons olive oil and 1/2 cup balsamic vinegar. Put in a food processor and whiz it up!

Obviously, the third option is the most time consuming but it's my personal preference. You may need more vinegar too. This is also comparitively low in fat.
Enjoy!!!
