Blueberry Angel Dessert
(Prepare at least 2 hours ahead..)
1 (8 oz. package) cream cheese - softened
1 cup Confectioners sugar
1 (8 oz. carton) Cool Whip - thawed
1 (14 oz.) prepared angel food cake - cut in 1" cubes
2 cans (21 oz. each) blueberry pie filling
In a big bowl, beat cream cheese and sugar with an electric mixer until smooth.
Fold in (by hand) Cool Whip and angel cake cubes.
Spread evenly in a glass 13x9x2" glass baking dish. Top with the blueberry pie filling.
Cover and refrigerate at least 2 hours.
When firmed up, cut in squares.
Makes 12 to 15 Servings

Cinnamon Cheese Roll-Ups
1 (16 oz. loaf) white bread
1 (8 oz. package) cream cheese - softened
1 egg yolk
3/4 cup Confectioners sugar
1 cup granulated sugar
1 and 1/2 teapsoon cinnamon
3/4 cup butter or margarine - melted
Preheat over to 350 degrees.
On wax paper (to prevent sticking) flatten each slice of bread with a rolling pin and remove the crusts. (Or remove the crusts prior to flattening. Whatever you prefer.)
In a medium bowl, mix the softened cream cheese, the egg yolk, and the Confectioners sugar. Mix very well.
In a small bowl, mix the granulated sugar and the cinnamon.
Spread 1 Tablespoon of the cheese mixture on each slice of bread. Roll up jelly-roll style. Dip each roll in the melted butter and then roll in the cinnamon mixture.
Place on an ungreased cookie sheet(s).
Bake 20 minutes or until golden brown.
Makes 16 Cinnamon Cheese Roll - Ups

Baked Bean Chili
2 pounds of lean ground beef
3 cans (28 oz. each) of baked beans (any brand is fine)
1 can (46 oz.) tomato juice
1 can (11 and 1/2 oz.) V8 Juice
1 envelope of chili seasoning (any brand)
In a Dutch oven, cook and brown the ground beef over medium heat until no longer pink. Drain off the excess fat.
Stir in remaining ingredients. Mix well. Bring to a boil.
Reduce heat and simmer - uncovered - for 10 minutes or until all ingredients are heated through.
Makes 24 Servings
