I went to the online recipes and specified 0 points in the search and a wonderful version popped up.
2 cloves of garlic
1 onion diced
2 carrots diced
1 red pepper diced
1 celery stalk diced
2 small zucchini diced
2 cup green cabbage shredded
2 cups swiss chard chopped
2 cups cauliflower small florets
2 cup broccoli (I left the broccoli out)
2 tsp thyme, fresh chopped
6 cup vegetarian broth (I used fat free chicken broth)
2 tbs parsley or chives, fresh chopped
1/2 tsp. Salt
1/4 tsp black pepper
2 tbs fresh lemon juice (I left this out)
Bring to High boil every thing but the parsley, salt and pepper. Lower heat and simmer 10 minutes. Remove from stove and add salt, pepper and parsley. YUMMM!
The cauliflor breaks up into little pieces resembling rice. Very tastey. I've made it twice so far. The second time I just "winged" it on amounts and veggies. I think the first one tasted better but the second one is great, too.
