When can we make ADR's now - 90 or 180 days ahead of time?

180 days for all guests.
If you have a confirmed reservation for a Disney owned resort, at your 180 day mark (not before), you can make reservations for that day plus the next 10 days, known as the 180 + 10. This is a perk for resort guests only

What is it if you are staying off-site? When we went last time it was 90 days and we (off-site) could start 90 days earlier, but only for that day and not for the whole trip - had to be done day by day. Is it still like that, only 180 days now?

Yes. You'll be able to make your reservations day by day at 6AM Eastern time on line or 7AM Eastern time by phone.
