9 in January - Where do we go?

OK folks, here's my struggle. There are 9 of us staying in an OKW GV in January (3 kids: 6,4,2). My peeps are very spontaneous and I just know it will be a struggle convincing folks on ADRs at the 180 window. Will it work to call once we get there to make ressies? Also, what restaurants or counter services are "DO NOT MISS" sites? I know I wanna go to Wolfgang's, and Ohanas seems fun, but what do ya'll think? What are the places that you absolutely eat at every time you are at the World? One more ?, do the restaurant hours change with the season? In other words, will walkins be easier later in the evening because the parks close earlier? Thanks for your help!

Walk ins are never easy but January is a slower time to go... If you are flexible, you might be able to have a walk in somewhere on property. If you do not want to make reservations prior to your arrival, at least when you get there go a guest services and attempt to make some... especially with a party of 9. If you attempt dining with no reservations, you may have to split to two tables as a party of 9 is difficult to seat..
