8pm flight on disembarkation day. What would you do?

To me it depends on the time of the year. If it is winter or cooler weather we rented car
and explored Orlando. Summertime? UGH with that heat and humidity we rented a
day room Hyatt and worth every penny.
 
Can you leave luggage with bell services without a reservation?
I don't know. I've never been asked for my reservation number when checking bags at bell services. Seems like one of our various girls trips we were dining at a resort the morning of embarkation and we left some luggage with bell services while we ate.
 
We have done room at Hyatt (1st cruise) which was great when kids were younger and napped. We all swam, napped and watched a movie. Since then, we have done Orlando science center which was pretty good with school aged kids. Our favorite is Kennedy space center. We got their prior to opening and stayed until 3:30 and still got back, dropped off rental, through security with two hours to spare before our 7:30 pm flight last year. We will probably go back to KSC this year post cruise. There is so much to see and do if u are at all interested in space exploration. We were not sure we would enjoy it (having been Johnson space center in Houston) but we al loved it!

What age would you recommend for KSC? I was thing my 4 y.o. might be interested, but not sure if he's quite old enough yet, if it's interactive enough, etc.

My kids were 5 and 10 when we went and they all had a great time. There are some exhibits that are very hands on such as a slide (demonstrating gravity), land the space shuttle simulator, simulation of using the robot arm on the space shuttle. They have mockup of the space shuttle cockpit and international space station that kids can crawl through. Also the real rockets are pretty impressive up close. The bus ride was probably a little dull for him but the driver did point out the alligators and eagles along the way. He spent a lot of time on those simulators. they have films about the space programs and you do see the old command center and launch pads on the bus tour.
 
With late flights, we have spent the day at Kennedy and a day at a WDW Park/Disney Springs. Two trips, two different ways to spend the day.
