The park hours are not an issue. Just because the rides stop they don't kick you out of the park.

Thanks I was a bit concerned that wants Wishes started we would have to leave.

Nope, you finish out your meal as usual, and then you walk out, and admire the park in all it's magical, empty, quiet glory.
It's really neat, happened to us for our 'rehearsal dinner' at the Coral Reef.
