7DMT, Sum of all Thrills, and Mini Golf questions

I am in the middle of a trip right now, first time back to WDW in 7 years and first time with kids.

I've got a couple questions I couldn't seem to find answers to from google, and would be really appreciative if anyone here could help out.

Going to Epcot tomorrow (Wed 4/20), so those first:

Sum of all Thrills:
My kids aren't old enough to ride, but they would love to help design the coaster. From pictures online, it looks like you don't design until you are in the attraction. Would my too short 3 and 5 year old be able to help design the coaster for my wife and I to ride? If not, we'll probably skip it.

Mini Golf:
We were thinking of walking to Fantasia Gardens from Epcot. But we don't want to if there would be a long wait, as any wait would cut into our World Showcase time. Does anyone know what the mini golf wait times are like around 5-5:30pm on a Wednesday?

Seven Dwarfs Mine Train:
This question is about the ride video. We asked to ride in the back, and then viewing the preview video later that night, the video cuts out pretty much right after we come into the frame. The other cars, you get to see them go all the way past the camera. Does anyone know if the video you actually download is identical to the preview? Should we specifically ask not to be seated in the back on our next time?

If kids don't meet the height requirement, I don't think they are allowed into the line for an attraction, but Sum of All Thrills might be an exception to that? (They might be allowed into the design room with you, I don't really know.)

But your wife and you wouldn't be able to both ride at the same time (who would watch the kids?), so you wouldn't be able to be in the design room at the same time either.

Possibility: while one of you is designing and riding, the other might take the kids to the Colortopia attraction right across the hall. It has three different segments to it, so then when the second one of you is doing Sum of All Thrills, the other might take the kids through the second and/or third Colortopia segment.
 
I don't believe your children will b e allowed into the line at sum of all thrills.

On the 7 dwarfs train I haven't downloaded a video but I haven't seen a difference from the preview to the downloads on other things. My guess is the back just doesn't get in much of the video and if you want to see yourselves then you need to ride further toward the front.

I have never had much of a wait at mini golf but I have never tried at a crowded time of the year. When are you planning on going? I would guess you will rarely have a long wait on a Wednesday night but the closer you are into summer break the worse the lines will get.

I guess we won't try to rush to Sum of All thrills this morning, then. There are 2 other non-coaster fans with us who would watch the kids, so that wouldn't be an issue. I don't care to do it too much, it would be more for the kids who would enjoy designing then watching us go on it. I'll ask and find out if we make it to Innovations today.
