7 day pass over 8 days?

O.k so we have a 7 day myw pass with waterpark option and the meal plan. We arrive on Sunday by noon, so we are planning on hitting mgm and have dinner reservations there at mama melrose. We also have Monday and tuesday planned at epcot and mk. Wednesday we are getting a car rental and going off disney for the day and don't plan any time there. Does this mean we have wasted a day of our passes or can we just keep using the days from Thursday till Sunday. Our flight out isn't until 6pm so I wondered if we could hit a park in the morning but it is our official 8th day ...can we use Wednesdays park passes for Sunday or is it only 7 consecutive days????
I was hoping to hit somewhere for lunch before leaving for the airport around 2pm (ME for a 610pm flight)???

MYW passes are different than the old Length of Stay passes. If you don't have the No Expiry option on the tickets, they expire 14 days after their first use. You can use them however you wish within those 14 days, so yes, you can take a day off from Disney in the middle of your week with no problem.

With the water park fun option you can go to the water parks, etc. during the day you skip going to the theme parks, if you wish to.
